Pam’s career in the food business began over 30 years ago when she, with her husband, owned ‘Thursday Cottage’, a small artisanal business which produced specialist jams, marmalades and fruit curds which supplied many of the best independent retailers around the world including Fortnum and Mason. The Company was awarded the Guild of Fine Foods prestigious accolade 'The Best Specialty Food Producer’ in 2001 - no mean feat for a jam maker.
It was during this time Pam gained her wealth of expertise in preserving foods. Pam has now hung up her professional wooden spoon and has for a number of years worked with Hugh Fearnley-Whittingstall appearing in a number of the River Cottage TV series.
She has written the best-selling River Cottage handbooks PRESERVES and CAKES and contributed to the magnificent RIVER COTTAGE A TO Z ingredients directory. Her latest book, PAM THE JAM, published by Bloomsbury is an extensive (and rather beautiful) book of all her work.
Pam’s passion for preserving lives on and she now works as a consultant, sharing her extensive knowledge to businesses, communities and teaching venues around the globe. She is both a judge and patron of the world’s Marmalade Festival.
Pam lives in the West Country with her family and a very happy long haired Dachshund called Peggy. She is part mermaid enjoying a daily swim in the sea.
